Japanese knife brand, Miyabi, has well and truly blurred the great divide between professional and consumer kitchen knives with its new generation Birchwood collection.

Immediately recognisable by its genuine Masur Birch handle and singularly unique Damascus flower patterned blades, the Birchwood collection is produced in Seki, Japan from the finest materials, with new generation technology and hand finished by master artisans using the traditional Samurai Sword techniques.

The story behind these knives is as captivating as the knives themselves. The beautiful, unique Damascus flower pattern of the blade is created by folding 100 layers of two different grades of steel around a micro-carbide powder steel core (one of the highest performing steels available). 

The blade is Friodur ice-hardened at -196˚C to a mighty Rockwell hardness of 63, while the traditional D-shaped handle is crafted from the beautifully patterned Masur Birchwood and finished with an intricate mosaic pin and two red spacers. 

The Miyabi Birchwood collection comprises nine blade styles, from Shotoh and Santoku to Guyutoh and Sujihiki, in varying sizes.

Retail prices range from $419 to $759.
