Demeyere, a Belgian company and an industry innovator in the world of technologically advanced cookware, has a boutique range now available in Australia.

Demeyere was founded more than a century ago and led the field with such innovations as the aluminium sandwich bottom to improve heat conductivity; induction compatible cookware; and Silvinox, a process that removes iron and impurities from the surface of stainless steel to make cleaning super easy and eliminate fingerprints.

Demeyere 18/10 stainless steel cookware possesses several distinct points of difference from all other cookware―the main one being its recognition that different types of cooking vessels require totally different technological concepts.

Most Demeyere pans have a seven layer base to optimise heat distribution―the Atlantis range features a 2mm pure copper layer that is sandwiched between two layers of silver. There are then three layers of stainless steel on the base and one on the interior of the pan. The triple layer base is especially important for induction cooktops as it is so efficient that it is up to 30 per cent more energy efficient than all other types of cookware.

The base of the pans is where the specialisation happens. For vertical cooking vessels―saucepans used mainly for heating liquids, for example―the Atlantis range features a 2mm pure copper layer for perfect, even heat distribution over the entire base. The side walls of the pan are not actively heated as this is done internally by the rotating liquid in the pan.

Conical pans, however, often used for delicate sauces, receive quite a different technological approach. These pans require excellent even heat distribution across the entire base but also need active heating up the walls for the best results. This is because, with sauces, temperatures are often kept below boiling point. The seven layer base in this type of pot is 5.5mm thick, including a 2.2mm aluminium core.

A frying or sautéing pan has quite different needs again. In addition to the actively heated base and sides this type of cooking also requires a very high degree of heat retention. Demeyere Ecoglide frypans feature a five-layer material, 3mm from base to edge, ensuring fast efficient distribution of heat. The ceramic non-stick coating is free of PTFE and PTOA.

Atlantis is the boutique Demeyere collection available in Australia and other key features include tightly fitting lids; elegant two-tone exterior featuring Silvinox finish; cast stainless steel stay-cool handles; easy-pour, non-drip rims; and compatibility with all types of cooktop, including induction. All pans are dishwasher safe and all can be used in the oven.

The Demeyere Atlantis collection includes saucepans of various sizes, casserole pots, oval lidded pots, sauté pans, stockpot, kettle, steamer insert, grill pan and Ecoglide Frypans.
